Chicken Vegetable Spaghetti Chow Mein 🍜🥕🍗
This delicious Chicken Vegetable Spaghetti Chow Mein is an easy Asian-inspired dish made with regular spaghetti as a perfect substitute for Chinese noodles. It’s packed with tender chicken, colorful vegetables, and a flavorful savory sauce.
Ingredients
For the Pasta and Protein
- 400 g spaghetti
- Chicken breast, thinly sliced
For the Vegetables
- 1 onion, sliced into wedges
- 2 carrots, cut into thin strips
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 2 garlic cloves, minced
For the Asian Sauce
- 4 tablespoons soy sauce
- 2 tablespoons oyster sauce or hoisin sauce
- 1 teaspoon sesame oil
- 1/2 teaspoon sugar
Instructions
- Cook the spaghetti in a pot of boiling salted water until al dente. Drain and rinse with cold water to stop the cooking process and prevent the pasta from sticking together.
- Heat a little oil in a large skillet or wok over high heat. Add the thinly sliced chicken and stir-fry until fully cooked and lightly golden. Remove the chicken from the pan and set aside.
- Add a little more oil to the same pan. Add the sliced onion and minced garlic and stir-fry until fragrant.
- Add the carrots and sliced red and green bell peppers. Stir-fry over high heat for 2–3 minutes, keeping the vegetables slightly crisp.
- In a small bowl, combine the soy sauce, oyster sauce or hoisin sauce, sesame oil, and sugar.
- Return the cooked chicken to the pan and add the spaghetti.
- Pour the prepared sauce over everything and toss quickly over high heat for about 1 minute, until the pasta is evenly coated and all the flavors are combined.
- Serve hot and enjoy!
